Cook the perfect Christmas turkey

This Christmas, please your guests with this simple and easy to prepare turkey recipe. Paired this Christmas turkey with one of our Beaujolais Nouveau or Pinot Noir wine recommendations.


For the stuffing
– 2 Tbsp (30 mL) olive oil
– 1 chopped onion
– 2 chopped celery branch
– 2 apples diced
– 1 cup (250 mL) of dried cranberries
– 1/4 cup (175 mL) walnuts
– 2 sausages spicy (mild)
– 5 to 6 slices of bacon (cooked)
– French baguette bread in dices (half a baguette)

For the turkey
– 1 turkey
– 3 cups (750 mL) of water
– 1/4 cup (60 mL) of melted butter

Salt and pepper to taste


Heat oil on medium heat and cook celery and onion. Reserve.
Heat sausage until well cooked. Reserve.
Stir the stuffing ingredients.

Stuff turkey. Make sure that turkey will remain closed by using twine.
Lay turkey in a roasting pan. Add 3 cups (750 mL) of water.
Make sure to cover the wings and drumsticks with foil.
Oven for 4 hours at 325ºF(160ºC).
Basting with melted butter every 45 minutes to avoid the turkey to dry out
Serve and enjoy.

If you are saving a Beaujolais Nouveau for a special occasion, here is the time. Beaujolais Nouveau will be a good and an accessible match to everyone.

Pinot Noir will be another excellent wine pairing with turkey. Complex, balanced with red fruits and earth aromas, the Pinot Noir will be a nice choice. No matter if you select a Pinot Noir from Burgundy, Oregon or California, Pinot Noir will simply be one of your best bet to pair with this festive meal.
